Marlon Rojas, once a commercial pilot, rediscovered his family’s legacy and future on their farm, La Reserva. Together with his uncles—seasoned cultivators of rare varieties like Gesha and Sidra—he’s turned a family tradition into a pursuit of excellence in specialty coffee.
Process & Craftsmanship
This semi-washed Bourbon undergoes an intricate, flavor-forward process. After selective handpicking and classification, the cherries begin a 24-hour pre-fermentation to unlock their latent sweetness. They’re then depulped and semi-washed, retaining mucilage for complexity, before entering a 48-hour anaerobic fermentation with fresh passion fruit. This rare co-fermentation infuses the beans with subtle tropical acidity and floral aromatics.
Post-fermentation, the coffee is dried slowly over 15 days on raised beds and stabilized in the dark for another 15, ensuring structure, clarity, and balance.
Cup Profile
In the cup, expect a radiant interplay of ripe peach, delicate elderflower, elegant white tea and a hint of zesty yuzu. The body is silky, the acidity refined, and the finish enduring—perfectly capturing the essence of its origin and the innovation behind its process.
